I wanted to share this recipe I made a few days ago in my slow cooker. My husband said it was one of my best recipes yet. And he supposedly doesn’t like things made in the crockpot! haha!

I know I posted this about a week ago but I made it today and it is SO good. Amazing actually. My husband who does not like sloppy joe’s said and I quote “Jenny that’s boss” hahaha.<3 The only change I made was that I used 2 lbs of meat insteadof 1.I also used 1/2 green pepper and 1/2 red pepper.

Next week, I plan to make these recipes below ! They both look warm and delicious. I can’t imagine how wonderful a baked apple is going to taste with some vanilla ice cream! Both are made in the crockpot. The baked apple recipe includes instructions though if you would prefer to make in the oven. I may do this so that they both can be cooking at the same time. If you don’t have a crockpot I cannot tell you how much I recommend getting one! It has made life so much easier for me.

For those on Weight Watchers, it does list that the baked apples are 5 points . 🙂
I made this recipe in the crockpot and it turned out really good!! It’s super easy! I used the light cream cheese. Also, I baked some cornbread to go with it but you could also have it with some brown rice. Just get those boil in a bag 10 min rice and voila!

One serving is one pound of chili. It sounds like a lot of food, but feel free to eat less. However, once it’s in the bowl it looks like a normal serving. This chili also has a best friend which is a cinnamon cornbread muffin and absolutely delicious. I used the Jiffy cornbread mix and mixed in some cinnamon. There are so many things I could say about this chili, like the fact that there are only 3 calories of fat. Yes, you red that right. Yes, that’s for one 1 pound serving. Sounds pretty amazing, right? And carrying on in true Fit Girl spirit you can count on being able to match this chili in whatever dish you see fit. Perfect to make in cold weather, too.
- 1 bell pepper, chopped
- 1 large tomato, diced
- 1/2 white onion, diced
- 7 cloves fresh garlic, minced
- 1 jalapeno, chopped
- 1 small can tomato paste
- 1 can tomato sauce
- 1 can black beans reduced sodium, drained
- 1 can pinto beans reduced sodium, drained
- 1 can kidney beans reduced sodium, drained
- 2 cans full of water
- cumin, salt, and pepper to taste
- Set crock-pot to LOW
- After preparing fresh ingredients and draining beans add all ingredients to crock-pot
- Let cook for at least 6 hours
